If the answer to either question is no, it's still fine, there are other options, it's not the end of the world, but personally I'd suggest waiting until your second playthrough for that. Non-human races may choose to multi-class at character creation.

Ranger and Paladin are just glorified fancy fighters. Using your specific question as an example, should you play as a ranger or fighter instead of a paladin? Answer: Meh. Keep in mind that in BG1, a lot of the differences between similar characters aren't going to be felt.
